Chicken Soup

Not only Chicken soup but also any broth from any animal bone is collagen rich healing food. Collagen is a form of protein that is the foundation of our physical body – muscle, bone, skin…  There is a well known collagen cuisine, Ossobuco, an Italian dish which is  bone marrow.  Well Chicken soup is a reasonable, easy to cook and very convenient healing food.


You should stay away from the commercial cubic called bouillon or granulated soup stock because they are almost pure MSG.  Most of any Asian Restaurants in U.S. and also every Asian country use a commercialized ready-made stock. Even they tell you that they do not use MSG, those stock already contain MSG, Sugar, preservatives and other food additives.  MSG, especially in a liquid form is dangerous – sauce, dressing, soup and etc.

 

 

  

Super Basic Recipe:

Place 8 pieces of chicken wings and 8 cups of water in a big pot.

On a stove, high heat till begin to boil, and after that cook for at least 3-4 hours with low heat. However, if you cook longer, the soup become much thicker. I like to cook for 6 or more hours.  Cooking on a stove with direct heat is the best way. You can see and taste the result. However for people who really do not have time to stay with the boiling pot, using a slow cooker, cook for about 8 -12 hours or over night on high heat.

Strain the broth with a strainer. Discard the bones, skins and meat. They are garbage because all the calcium, collagen and life energy have already seeped out into this very tasty broth.

Fill glass jars (mason jar) with the very hot chicken stock till the top and close the lids.  As the stock cools down, the inner lid become a vacuum state and can be stored in the refrigerator for 3-4 weeks depending on the freshness of the chicken and also storage condition. Make sure that the stock is cooled down to room temperature before going into the refrigerator.

Cooking Ideas:

1. Add vegetables, sea salt and pepper to the stock to make vegetable soup.

2. Or dissolve miso into the stock, add sprouted and cooked brown rice ( See How to Cook Safe Brown Rice )and drop a stirred egg to make brown rice porridge.  Not GAPS™diet !

3. Or add chopped scallion, grated ginger, dry shiitake mushroom and tamari soy sauce.

Those are just my ideas and this stock is truly all-purpose.  Try and find your favorite cooking ideas.

Although the stock can be stored for 3 to 4 weeks.  However once you open the jar, use it up within a week or so and discard the remaining if any.

The primal purpose of our eating is to recharge our own life energy including nutrition by receiving the food’s life energy which is contained only in fresh foods. Therefore, if you keep consuming old and lifeless foods trying to reduce the waste, it may be almost the same as consuming garbage.  There is no merit in doing so, because while those lifeless foods do not become a part of our life force, they still need to be broken down and eliminated from our body, and our precious energy is wasted for this unnecessary process.  And I believe this waste of energy causes the accelerated aging and hardening of our body by exhausting our health protective system.

Many people are consuming foods which are canned, bottled (along with artificial preservatives), frozen or coated with various kinds of food additives.  And recently, I heard that a famous hamburger restaurant succeeded in prolonging the shelf life of their hamburger, thanks to the unnatural ingredients made through the food engineering process.  These are all lifeless foods.

In order to consume foods with full of life force, I recommend that you purchase vegetables, chicken, beef, fish and whatever, which look energetic, not the ones which just look clean or which have very smooth texture (not because of wax.)  Those without any spots or bruises are most unnatural, because they may be produced in a factory, not in the farm, and controlled to be free from those blemish by pesticide or herbicide.  Making full use of your five senses of sight, smell, hearing, taste and touch, and even your sixth sense is also very important in selecting energetic foods.  I suggest you to train yourself to select foods which make you young, healthy and happy.
